In a world of waste-free cocktails, this is our addition to the team. With the caramel spice of Horse With No Name bourbon and the classic sour template we all know and love, the addition of pineapple flesh and a pineapple skin syrup turns this sour into a tropical explosion of flavour. Hereโs the recipe for both the cocktail and the product.

Waste-less cocktails are all the rage. Bartending and cocktail making have always been notorious for the amount of waste that it creates, especially when it comes to fruits.
Citrus fruits are often the biggest offender. Limes and lemons are so often allowed to rot and then thrown away, or theyโre squeezed for fresh juice and the husks are discarded (along with all the beautifully aromatic oils left in the skins).
And thatโs not to mention the amount of water, packaging and blue roll that goes down the drain or into landfill.
With that in mind, we wanted to create a summer sour that not only uses the new Horse With No Name habanero-infused Bourbon, a new favourite for us since we first tasted it, but also every single part of the pineapple that gives the cocktail its tropical twist.
We came up with the Savina Sour, which blends the sweet spice of the Bourbon with the tangy tropicality of the Pineapple. Not only that, but we use the flesh of the pineapple and the skins of the pineapple in the drink, then the fronds of the fruit for the garnish. No pineapple was wasted in the making of this cocktail!
The pineapple skin syrup was more delicious than we expected, with the same fruity sweetness of the flesh but with less acidity and a subtle bitter vegetal note.
This cocktail is an all rounder. Spicy, sweet and sour, reminiscent of the classic whiskey sour and also pineapple forward tiki style drinks. If pineapple cocktails are your speed this is a must for your tropical arsenal.
How To Make The Savina Sour
Ingredients:
๐ท 2 chunks Pineapple
๐ท 15ml Pineapple Skin Syrup
๐ท 25ml Lemon Juice
๐ท 10ml Egg White
๐ท 50ml Horse With No Name Bourbon
๐ท 2 dash Lime Bitters
๐ท Garnish: 3 Pineapple Leaves
Method:
๐ถ Muddle the Pineapple and Pineapple Skin Syrup together
๐ถ Add all other ingredients
๐ถ Shake hard and fine strain into a rocks glass over cubed ice
๐ถ Garnish with the Pineapple Leaves and enjoy!
How To Make The Pineapple Skin Syrup
Ingredients:
๐ท 100g Washed Pineapple Skins
๐ท 150g Sugar
๐ท 100g Water
๐ท 50g Pineapple Juice
Method:
๐ถ Add Pineapple Skin & Water into a saucepan on a medium low heat, for about 2 minutes
๐ถ Add Sugar, then continue to stir until the sugar dissolves.
๐ถ Once the sugar has dissolved, turn the heat down to the lowest heat and add pineapple juice, stir and turn off heat.
๐ถ Cool, Strain and bottle.
