Richard Linden
OWNER / HEAD INSTRUCTOR

Leaving his native Sweden, Richard has travelled the world in pursuit of bar and hospitality expertise. From the UK, where he spent five years in the Chewton Glen five star resort that is consistently voted in the top hotels in the world, to Thailand where he worked as the Head Instructor at the European Bartending School. On these shores, Richard trained for three years under our celebrity hotelier Francis Brennan at The Park Hotel Kenmare, as well as being restaurant and bar manager at the Michelin Star Cliff House Hotel.

PAUL TAYLOR
HEAD BARISTA

Paul developed a passion for coffee whilst living in New Zealand and Australia between 2001 and 2005. A time when our Australian friends were regarded as having the most advanced barista scene outside of Italy.   On his return to Dublin Paul worked at Third Floor Espresso (3FE) where he spent 2 years refining his trade. He was one of the founding owners of Tamp & Stitch in Temple Bar which was one of Irelands first Clothes & Coffee Boutiques. Tamp and Stitch was listed in the Irish Times as best new shop in 2013.

As a fresh immigrant to Ireland looking for a way to find a spot in the hospitality industry I booked the combined cocktail and barista course at DBA. Both courses have tons of hands-on supervised skill-building (mixing drinks and black dripping cups for foaming) and real interesting background (history of alcohol-cocktails and coffee) which is always a good icebreaker with patrons. A handful of basic recipes was taught and a guest shaker taught us a whole bunch of drinks with their stories.The tasting session was a great way to end the cocktail course.  The coffee class focused on the raw basics..decent grinding good dripping clean workflow foam basics and went through the canon of standard drinks..with these classes in my trunk I feel a squid more confident when applying for a job..I can't wait to have some job experience to take the month long class!
